Over the past few years, we’ve built a family tradition around serving wild game during our holiday meals. Sharing our harvest brings more than incredible flavor to the table. The harvest brings stories about the animals, the landscapes they come from, and the ecosystems we care so much about. This year we had the rare opportunity to enjoy wild game from Hawaii. Maui Nui Venison works with local Axis deer populations to provide high-quality meat to consumers, and for our family gathering we prepared their Reserve Aged Holiday Roast.
As our lives become busier with work, children, and caring for aging parents, we wanted this holiday meal to feel special. The venison roast was chosen to pair with halibut we caught this past summer in Alaska, creating a meaningful “surf and turf” that connected both our adventures and our food.
The Venison
Invasive species are one of the most significant threats to ecosystems, and Hawaii has been especially impacted. Many island environments are home to endemic species found nowhere else, making them extremely vulnerable to non native introductions. Axis deer, originally brought from the Indian Subcontinent, are a prime example. With abundant food and no natural predators, their population surged and placed immense pressure on local vegetation that evolved without grazers.
While Axis deer pose ecological challenges, they also offer an unexpected opportunity. They produce exceptionally high quality meat, and Maui Nui has developed a model that turns this invasive population into a resource while helping control its impact. Axis deer meat is not only delicious but also nutrient dense, rich in protein, healthy fats, and antioxidants. Their stress free, humane nighttime harvesting practices support both ethical standards and meat quality, resulting in food that is sustainable, responsible, and flavorful.
Once a year, Maui Nui releases its Reserve Aged Venison Roast, one of their most anticipated offerings. This center cut roast is known for its even grain, tender texture, and rich flavor. Aged for 14 days, it becomes remarkably soft and balanced, making it a true showpiece for any meal.
Thoughts on the Maui Nui Venison Roast
The Maui Nui Reserve Aged Venison Roast arrived at my door frozen solid, packed with dry ice inside a small, well-designed box that made the unboxing experience genuinely exciting. Inside, an instructional card provided clear guidance on thawing, preparing, and cooking the roast, along with suggested spices. Beneath it was a beautifully trimmed three-pound center cut roast, neatly netted and vacuum sealed.

Maui Nui Venison Roast Preparation
Although the dry ice had evaporated by the time it arrived, the roast was still completely frozen. I placed it in the fridge to thaw overnight. The next day, cooking it was incredibly straightforward. Once thawed, I applied a generous coating of sea salt and let the roast rest in the refrigerator for 24 hours. Just before cooking, I added a healthy rub of herbs and spices while the oven preheated to a blazing 450 degrees.

Cooking and Thoughts
The roast spent about fifteen minutes at high heat to develop a solid sear, then cooked for roughly another hour and fifteen minutes. Maui Nui recommends pulling the roast at around 130 degrees for a medium finish, but I prefer my roasts closer to medium well, so I aimed for 140. Once it reached temperature, I set it on the counter to rest.
After twenty minutes, the Axis deer roast was ready to carve. The meat sliced effortlessly and showed beautiful grain structure. The flavor was exceptional: light, clean, and perfectly complemented by the seasoning. As a family that primarily eats wild game for red meat, we were impressed by how this venison ranked among the best we have ever tried. For anyone who worries about gamey flavor, this roast had absolutely none. It was lean like most wild game, yet remarkably moist and tender.

Done!
Most of my family does not often have access to wild meat, and for everyone it was a first experience with Axis deer. Every plate was cleaned, many went back for seconds, and despite my hope for leftovers, we ended the meal with nothing remaining. It was truly outstanding.
